There are around 50 shades of ‘white’ for teeth ranging from “Ermahgerd, I’m blind!” through to a rather fetching cream. So perfect white Hollywood teeth are a lie, much like Botox. I suspect the discolouration in adult teeth is caused by what they eat and drink rather than changing shades; tea for instance, that will stain your teeth something splendid!

Apart from the obvious tooth-staining things that adults eat, drink and smoke, I’ve read somewhere that infant tooth enamel is a lot thinner than adult enamel so perhaps this also has something to do with it? Might be how the light interacts with the different surface? I’ll have to ask my dentist!
