For hair to grow, new cells would need to be produced. When somebody dies their body stops producing cells and the current cells die away.

Exactly as Natalie says! People thought hair and nails grew after death because the tissues of the body would contract and shrink – so while it looked like their nails grew, they didn’t. The skin shrunk!
